Summary
To me, this book is beautifully written as the definitive collection of traditional, contemporary and innovative recipes for lovers of Japanese cuisine as I am. The contents are comprehensive from the recipe list to “guide to weights and measures” throughout a recipe. What I appreciate most about this book, it fills up with beautiful and colored pictures of each recipe, featuring a wide variety of recipes for sushi rolls, Nigiri-zushi, molded sushi, hand-rolled sushi, vegetarian sushi, Chirashi-zushi, wrapped sushi. Also, the book featuring amazing recipes on sushi rice in fried-tofu bags, sushi in a bowl, new sushi and drinks, sauces and side dishes. The authors also highlight the sushi etiquette, how to serve sushi and traditional customs of sushi preparation and presentations. The book also talks about health benefits of sushi, equipment and utensils used and the art of sharpening Japanese knives like Sashimi knife, vegetable carving knife and filleting knife.
