From this book, I’ve discovered that my favourite food is not just processed food but actually is ultra-processed food (UPF). The NOVA food classification system divided food into four groups. Group 1 is unprocessed or minimally processed food: foods like meat, fruit, vegetables, flour, and pasta. Group 2 is processed culinary ingredients such as sugar, honey, salt, vinegar, and butter: traditional food prepared using technology. Group 3 is processed food: ready-made mixtures of group 1 and 2, processed mainly for preservation. Group 4 consists of ultra-processed foods, which are products made from whole foods or their components and contain cosmetic food additives that are not typically used in cooking. With this new understanding, I gain a new habit of reading food ingredients first before buying.
